Each type of cheese has a unique composition with different proportions of the various ingredients. Some cheeses have higher levels of protein, fats, lactose, a-lactalbumin, and casein. If you are aware that you have ingested too much of a specific sort of cheese, this may also be a factor in your sensitivity to that cheese. It depends on how the cheese is prepared.
