Rhubarb
About Rhubarb
Rhubarb is a tart, leafy vegetable often used in sweet desserts.
Rhubarb provides vitamins, minerals, and dietary fiber. Rhubarb stalks are safe to eat (please be mindful of your results as these may indicate you should not consume them due to a sensitivity), but rhubarb leaves contain oxalic acid and are toxic if consumed in large quantities.
Rhubarb is commonly used in pies, tarts, and jams when the stalks are cooked with sugar.
